To me wrestling dirty means 2 things. 1st I would see it as some sort of unsportsman like conduct like a low blow or a chokehold.
Then on the other hand it could be something as simple as bending one of the rules that was set before the match started. For example if there was no choking aloud and someone "accidentally" Put a little too much pressure on is opponent's throat that could be considered dirty wrestling.
I think it could either refer to underhanded moves that exploits the opponent's weaknesses in an unsportsmanlike way, such as hitting him below the belt, or it could literally refer to dirty moves that emphasize poor hygiene, such as the notorious stinkface popularized by Rikishi.
